What is the difference among quick-cooking and old style oats…and may they be used interchangeably? —J.M., Wauwatosa, WisconsinQuick-cooking oats and old style oats are interchangeable, as long as you recall a the variations between the 2. Both were flattened with big rollers, however quick-cooking oats are cut into smaller pieces first. As a result, quick-cooking oats cook faster, and they provide a greater delicate texture to baked goods and desserts. If you want a heartier texture, use old style oats.
