Can I alternative butter for shortening in a cookie recipe? If so, do I use the equal quantity? Thanks for your assist! —J.G., Quanah, TexasButter may be substituted for shortening in same amounts. However, there will be differences on your cookies. Besides having a rich buttery taste, cookies made with all butter will unfold greater and have a darker colour. If your cookies are spreading too much, maintain the dough very bloodless, make sure the baking pans are cool and keep the oven temperature barely better than ordinary. You could also use a small quantity of shortening in location of some of the butter to help the cookies keep their form.
