Freezing Potatoes for Hash Browns

To freeze potatoes for hash browns, shred potatoes; keep in a bowl of cold water till all potatoes are shredded. Drain and blanch in boiling water approximately 3 minutes. Drain, rinse in cold water, drain again and pat dry. Pack into freezer boxes or resealable luggage. Store inside the freezer for up to one year. Use frozen in favored dishes calling for frozen hash brown potatoes.

For fries, reduce potatoes and maintain in bloodless water till all potatoes are reduce. Blanch in boiling water for 2 minutes; plunge into cold water; drain and dry properly with paper towels. Fry in warm oil (375°) until very mild brown. Drain on paper towels till cool. Pack into freezer containers or baggage. Later, fry frozen potatoes in deep fat preheated to 375° till crisp and golden brown.
