Freezing Okra

Light Cooking

I like to use okra in soups and different precise-for-you veggie recipes…so I try and keep some reachable in my freezer. I wash clean okra, blanch it, cool it quickly, then drain it properly on a paper towel. I slice it, arrange the slices on a baking sheet and freeze. Once it’s frozen, the okra can effortlessly be transferred to heavy-responsibility resealable plastic bags within the quantities called for in my recipes. I stash the bags in the freezer and use as wanted. Maxine B., La Quinta, California
