Timesavers [Short Cuts]
When I repair mashed potatoes, I accelerate the method by way of cooking the potatoes inside the microwave. I peel them, reduce them into quarters, positioned them in a microwave-safe bowl with water, then cover with plastic wrap I’ve poked holes in. I cook them for several minutes till tender, then mash, upload butter and seasonings. This takes less time, and I most effective use one bowl from start to finish. —Judy Shocik, Cherry Valley, Massachusetts
