After opening a block of low-moisture element-skim mozzarella cheese, I area it in a resealable bag and save it within the refrigerator. Unfortunately, it’s now not long before it begins to increase mold. What can I do to keep it from spoiling? —L.S., Bowling Green, OhioOpened cheese must be wrapped with waxed paper, then wrapped once more with a good seal of plastic wrap or foil. Mozzarella cheese stored this manner inside the fridge at a temperature of 34° to 38° will maintain for numerous weeks. If mould develops, trim off the mold plus 1/2 inch extra of cheese and discard it. The rest of the cheese may be eaten. High-moisture cheeses which includes cream cheese or cottage cheese must be discarded in the event that they broaden mould.
