When shopping for potatoes, look for the ones which might be organization, properly shaped and freed from blemishes. Avoid potatoes which might be wrinkled, cracked or sprouting. If kept in a fab, dark, well-ventilated location, most potatoes will keep for up to two weeks. However, new potatoes need to be used within 4 days of purchase. Generally, 3 medium russet potatoes or eight to 10 small new white potatoes identical one pound. One pound of russet potatoes equals approximately three-half of cups chopped or 2 to 3 cups mashed.
